Will it appear automatically on all out-of-stock products?

Yes. Once installed, the Notify Me button appears on any product page where the Add to Cart button is hidden due to out-of-stock status.

Does it work with WooCommerce variable products?

Yes. The button appears per variation — customers subscribe to a specific attribute combination and are notified only when that variation restocks.

Is there a limit on subscribers I can collect?

No limit on subscriber collection. The free plan includes up to 50 email notifications per month. Paid plans increase this limit.
